Strawberry and Banana Baked Oats

So, I have this blog for over 2 years, but as you can see, I only published 3 articles on here. Ups. Anyway, I thought it might be a good idea to start posting regularly, especially now that I have loads of free time. 😅 I would love to share my recipes here but also talk about topics which do not fit into my Instagram feed. My aim is to publish once a week, so I get into the habit of writing articles, and I don't feel overwhelmed by it. 

I want to start with something easy, so here is a recipe for strawberry and banana baked oats which I made this morning and they were super delicious!

The ingredients for one portion are: 
  • 40g oats
  • 1 small banana
  • 5g flaxseeds
  • 100g strawberries
  • 1 tsp baking powder
  • 1 tsp cinnamon
  • Optional: 15g protein - I used MyVegan Blueberry and Cinnamon
  • Optional: 1tsp maca powder
  • Toppings: 40g soya yoghurt, 15g almond butter and syrup of your choice 

First, preheat the oven to 200C. While your oven is heating up, mix all the dry ingredients together in an ovenproof dish, then mash 1/2 your banana and slice your strawberries. Add the mashed banana and sliced strawberries to your bowl and start slowly adding water too. You will need around 1/2 cup water, but if you want to use protein powder, you will need to add a bit more.

Make sure everything is well combined, and the texture of your oats is thick and not too runny. Top with remaining banana and place into the oven. Bake for around 25-30 minutes. After your oats are golden, take them out, and add the toppings of your choice. I always add yoghurt and nut butter and sometimes I also use some syrup.
