How to make the most of cauliflower leaves I Two simple recipes

Hi guys,
Today I would like to share with you two super simple cauliflower leaves recipes. Unfortunately, Cauliflower leaves often end up in our bins instead of our bellies, and people often believe they can't be used up or they are not as nutritional as the rest of the cauliflower - but don't get fooled. 🌿 The two recipes I have for you are super simple and delicious too so anyone can make them at home and reduce food waste.

The first recipe is creamy cauliflower and broccoli soup, and if you are following me on my  Instagram, you already saw this recipe. 

The ingredients you will need are:
  • Broccoli stalk
  • Cauliflower leaves
  • 1/2 red onion
  • 500ml Vegetable Broth
  • 85 ml Single soya cream
  • 40g Red Split Lentils 

Start by washing the broccoli stalk and cauliflower leaves and then chop finely. Then chop 1/2 red onion and add oil to a pot and heat over medium to high heat⁣. Add your onion and fry for a few minutes⁣. Add 40g red split lentil, roughly 2 cup vegetable broth, broccoli stalks & cauliflower leaves. Cook for about 20-30 minutes, you might need to add more water during this time. In the end, add 2-3 cloves of garlic and blend everything until smooth. Once smooth, add around 65ml single soya cream & season with pepper and salt. I also add some leftover cooked quinoa. This makes around 2 portions but it depends how much broccoli stalk and cauliflower leaves you have left and also how much water you add. I stored this soup in an airtight container in our fridge and consumed within 2 days. 

The second recipe is roasted cauliflower leaves, and I swear these are so good and perfect substitute for crisps! All you have to do is wash your cauliflower leaves and dry them. Then you have to preheat the oven to 200degrees and drizzle olive oil over the cauliflower and sprinkle with any seasonings you like! I used peri peri seasoning. Then you just put them in the oven for 10-20 minutes or until they are nice and crispy. Simple, quick, delicious and most importantly - sustainable because you don't create any unnecessary food waste  :)
